- 2 sushi-grade ahi tuna steaks about 6 ounces each
- 2 tablespoons sesame oil or neutral oil
- 3 tablespoons sesame seeds white and black
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Optional: 1/2 teaspoon garlic powder or smoked paprika
Prepare the Tuna: Pat the tuna steaks dry with paper towels. This helps achieve a better sear.
Season: Mix sesame seeds, salt, pepper, and any additional spices in a shallow dish. Press each steak into the mixture to coat evenly.
Heat the Pan: Heat a skillet over high heat. Add the oil and wait until it’s shimmering.
Sear the Tuna: Place the steaks in the hot pan. Sear for 1-2 minutes on each side, pressing down lightly with a spatula for even contact.
Rest and Slice: Remove the tuna from the pan and let it rest for 2 minutes. Slice into ½-inch thick pieces against the grain.
Serve: Pair with your choice of sides and sauces. Some of my favorites include a tangy ponzu sauce, wasabi mayo, or a bright citrus salad.
