For the Salmon:
- 4 salmon fillets 6 ounces each, skin-on preferred
- 1 tablespoon neutral oil I recommend avocado oil
- Salt and freshly ground black pepper
For the Homemade Teriyaki Sauce:
- 1/2 cup soy sauce I prefer low-sodium
- 1/4 cup mirin
- 1/4 cup sake or dry white wine
- 3 tablespoons brown sugar
- 2 cloves garlic minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Prepare the Teriyaki Sauce:
Combine soy sauce, mirin, sake, and brown sugar in a small saucepan
Add minced garlic and grated ginger
Simmer over medium heat for 5 minutes
Add cornstarch slurry and cook until thickened
Let cool completely
Prepare the Salmon:
Pat salmon fillets dry with paper towels
Season with salt and pepper
Brush with oil on all sides except the skin
Let rest at room temperature for 15 minutes
Air Frying Process:
Preheat air fryer to 380°F (193°C)
Place salmon skin-side down in the air fryer basket
Cook for 8 minutes
Brush generously with teriyaki sauce
Cook for additional 2-3 minutes until glaze is caramelized
