Ingredients
  

For the Salmon:

  • 4 salmon fillets 6 ounces each, skin-on preferred
  • 1 tablespoon neutral oil I recommend avocado oil
  • Salt and freshly ground black pepper

For the Homemade Teriyaki Sauce:

  • 1/2 cup soy sauce I prefer low-sodium
  • 1/4 cup mirin
  • 1/4 cup sake or dry white wine
  • 3 tablespoons brown sugar
  • 2 cloves garlic minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions
 

Prepare the Teriyaki Sauce:

  • Combine soy sauce, mirin, sake, and brown sugar in a small saucepan
  • Add minced garlic and grated ginger
  • Simmer over medium heat for 5 minutes
  • Add cornstarch slurry and cook until thickened
  • Let cool completely

Prepare the Salmon:

  • Pat salmon fillets dry with paper towels
  • Season with salt and pepper
  • Brush with oil on all sides except the skin
  • Let rest at room temperature for 15 minutes

Air Frying Process:

  • Preheat air fryer to 380°F (193°C)
  • Place salmon skin-side down in the air fryer basket
  • Cook for 8 minutes
  • Brush generously with teriyaki sauce
  • Cook for additional 2-3 minutes until glaze is caramelized
