Ingredients
  

For the Brine:

  • 1 gallon of water
  • 1 cup kosher salt
  • 1/2 cup brown sugar
  • 2 tablespoons pink curing salt Prague Powder #1
  • 2 tablespoons pickling spices see below
  • 4 garlic cloves crushed

For the Corned Beef Spices:

  • 1 tablespoon mustard seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon black peppercorns
  • 1 teaspoon crushed red pepper flakes
  • 4-5 bay leaves crushed
  • 1 teaspoon ground allspice
  • 1 cinnamon stick

The Beef:

  • 5 pounds of beef brisket trimmed of excess fat

Instructions
 

  • Prepare the Brine: Combine water, salt, brown sugar, curing salt, and garlic in a pot. Heat and stir until dissolved. Add pickling spices and let it cool. Transfer to a container large enough for the brisket.
  • Cure the Brisket: Submerge the brisket in the brine, cover, and refrigerate for 5-7 days, flipping daily.
  • Cook the Corned Beef: Rinse the brisket under cold water. Place in a pot, cover with water, and add spices. Bring to a boil, then simmer for 3-4 hours until tender.
