For the Brine:
- 1 gallon of water
- 1 cup kosher salt
- 1/2 cup brown sugar
- 2 tablespoons pink curing salt Prague Powder #1
- 2 tablespoons pickling spices see below
- 4 garlic cloves crushed
For the Corned Beef Spices:
- 1 tablespoon mustard seeds
- 1 tablespoon coriander seeds
- 1 tablespoon black peppercorns
- 1 teaspoon crushed red pepper flakes
- 4-5 bay leaves crushed
- 1 teaspoon ground allspice
- 1 cinnamon stick
The Beef:
- 5 pounds of beef brisket trimmed of excess fat
Prepare the Brine: Combine water, salt, brown sugar, curing salt, and garlic in a pot. Heat and stir until dissolved. Add pickling spices and let it cool. Transfer to a container large enough for the brisket.
Cure the Brisket: Submerge the brisket in the brine, cover, and refrigerate for 5-7 days, flipping daily.
Cook the Corned Beef: Rinse the brisket under cold water. Place in a pot, cover with water, and add spices. Bring to a boil, then simmer for 3-4 hours until tender.
