- 1 can 13.5 oz coconut milk
- 2 tbsp olive oil or coconut oil
- 1 medium onion finely chopped
- 3 garlic cloves minced
- 1- inch piece of ginger grated
- 1 tbsp curry powder
- 1 tsp paprika
- 1 tbsp soy sauce
- 1 tsp sugar optional, for sweetness
- Juice of 1 lime
- Fresh cilantro chopped (for garnish)
- Salt and pepper to taste
Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season with a pinch of salt and pepper.
Sauté Aromatics: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent. Stir in the garlic and ginger, cooking for another minute until fragrant.
