  • 1 pound cooked sausages kielbasa, Polish sausage, or smoked sausage work well
  • 2 cups white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 2 cloves garlic sliced
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon crushed red pepper flakes optional
  • 2 bay leaves
  • 1 small onion thinly sliced
  • A sterilized glass jar with a tight-fitting lid

Instructions
 

  • Prepare the Sausages: Slice sausages into bite-sized pieces or leave them whole.
  • Make the Brine: Combine vinegar, water, sugar, salt, garlic, peppercorns, mustard seeds, and red pepper flakes in a saucepan. Bring it to a boil, then simmer for 5 minutes to blend flavors.
  • Fill the Jar: Place sausage pieces, onion slices, and bay leaves in the jar. Pour the hot brine over them, ensuring everything is submerged.
  • Seal and Store: Tighten the lid, cool the jar to room temperature, and refrigerate for at least 3 days. For the best taste, wait 1-2 weeks before enjoying.
